- 8 large flour tortillas
- 1 (15-ounce) can black beans, rinsed and drained
- 1 cup frozen corn
- 1 red bell pepper, diced
- 1/4 red onion, finely diced
- 1 tablespoon Southwest seasoning blend
- 1 cup shredded Monterey Jack cheese
Instructions
- Step 1: Cook the chicken. In a large skillet, cook the chicken breast over medium heat until fully cooked (internal temperature 165°F/74°C). Remove from skillet, let cool slightly, then shred or dice into bite-sized pieces. Set aside.
- Step 2: Sauté vegetables. In the same skillet, add a small amount of oil if needed, then add the diced red bell pepper and finely diced red onion. Sauté for 5-7 minutes until softened. Stir in the Southwest seasoning blend and cook for another minute until fragrant.
- Step 3: Combine ingredients. Add the shredded chicken, rinsed black beans, and frozen corn to the skillet with the sautéed vegetables. Heat through for 3-5 minutes, stirring occasionally, until all ingredients are warm. Remove from heat and stir in the shredded Monterey Jack cheese until it begins to melt.
- Step 4: Warm tortillas. Warm the flour tortillas according to package directions – either in a microwave, dry skillet, or oven – until pliable and warm.
- Step 5: Assemble the wraps. Lay out a warm tortilla, spoon a generous amount of the chicken and vegetable mixture down the center, then fold in the sides and roll tightly from the bottom to create a wrap. Serve immediately.

- Keep any leftover chicken and veggie filling in an airtight container in the fridge for up to 3 days; store tortillas separately to maintain their fresh texture.
- Reheat the filling gently in a skillet over medium-low heat or in the microwave until warmed through, then assemble with freshly warmed tortillas for the best experience.
