Instructions
- Step 1: Preheat your oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper, allowing some overhang on the sides to easily lift the bars out later.
- Step 2: In a large mixing bowl, combine the almond butter, maple syrup, egg, and vanilla powder. Whisk vigorously until the mixture is smooth and well combined.
- Step 3: Add the oat flour, baking soda, and salt to the wet ingredients. Stir with a spatula until just combined, being careful not to overmix the dough.
- Step 4: Gently fold in the dark chocolate chips, if you are using them, distributing them evenly throughout the dough.
- Step 5: Transfer the dough to the prepared baking dish and press it down firmly and evenly into the bottom of the pan to form a compact layer.
- Step 6: Bake for 20-25 minutes, or until the edges are lightly golden brown and a toothpick inserted into the center comes out with moist crumbs. Allow the bars to cool completely in the pan on a wire rack before lifting them out and cutting into squares.
