- 1 cup (240ml) beef broth, low sodium
- 1/2 cup (120g) plain non-fat Greek yogurt
- 1/4 cup (25g) grated Parmesan cheese
Instructions
- Step 1: Cook pasta according to package directions in salted water until al dente. Reserve 1/2 cup of pasta water before draining the pasta.
- Step 2: While pasta cooks, heat a large skillet over medium-high heat. Add the lean ground beef and cook, breaking it apart with a spoon, until fully browned. Drain any excess fat, then add the finely diced onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.
- Step 3: Stir the tomato paste into the beef mixture and cook for 2 minutes, stirring constantly. Pour in the beef broth and bring the mixture to a simmer. Reduce heat to medium-low and let it simmer for 5-7 minutes, allowing the sauce to thicken slightly.
- Step 4: Remove the skillet from the heat. Stir in the plain non-fat Greek yogurt and grated Parmesan cheese until fully combined and the sauce is creamy. If the sauce is too thick, add a splash of the reserved pasta water to reach your desired consistency.
- Step 5: Add the cooked and drained pasta directly into the skillet with the creamy beef sauce. Toss everything together until the pasta is evenly coated. Season with salt and black pepper to taste before serving immediately.
