Ingredients
Scale
- 1 tablespoon dried butterfly pea flowers
- 1 cup hot water
- 2 tablespoons simple syrup (or to taste)
- 3/4 cup milk (dairy or non-dairy of choice)
- 1 cup ice cubes
- 1 teaspoon fresh lemon juice
- 1 lemon slice (for garnish)
- 1 sprig fresh mint (for garnish, optional)
Instructions
- Step 1: Brew the butterfly pea flower tea by placing the dried butterfly pea flowers in a heatproof cup or mug. Pour 1 cup of hot water over the flowers and let them steep for 5-7 minutes, until the water turns a deep blue color. Strain the tea to remove the flowers and set aside to cool slightly.
- Step 2: Prepare your serving glass by adding 2 tablespoons of simple syrup to the bottom. Fill the glass generously with ice cubes.
- Step 3: Gently pour the milk over the ice, filling approximately two-thirds of the glass. This will create the base for your latte.
- Step 4: Slowly pour the cooled butterfly pea flower tea over the milk and ice. The tea should layer beautifully on top of the milk, creating a distinct blue and white separation.
- Step 5: Drizzle the fresh lemon juice into the drink. Observe as the blue tea magically transforms into a vibrant purple or pink hue. Garnish with a lemon slice and a sprig of fresh mint, then serve immediately with a straw for stirring.
Notes
- You can brew the butterfly pea tea ahead of time and store it covered in the fridge for up to 2-3 days; simply assemble the latte fresh when you're ready to enjoy its beautiful layers and color change.
- Since this is an iced latte designed for refreshing enjoyment, reheating isn't recommended; it's best savored cold and freshly prepared for the full visual and taste experience.
- Serve this magical latte in a clear glass to fully appreciate the stunning blue-to-purple transformation and beautiful layers; a tall straw is perfect for stirring just before the first refreshing sip.
- For the most vibrant color transformation, ensure your butterfly pea tea has cooled completely before pouring it over the milk, and add the lemon juice slowly, observing how just a few drops create a beautiful spectrum from deep blue to vibrant purple or even a lovely pink.
