- 1/2 cup Greek Honey (for serving)

Instructions
- Step 1: Preheat the oven to 350°F (175°C). Grease an 8 or 9-inch round baking pan with the unsalted butter and lightly dust with flour or semolina to prevent sticking.
- Step 2: In a large mixing bowl, beat the Mizithra or Ricotta cheese until smooth and creamy. Gradually incorporate the granulated sugar, followed by the eggs, mixing well after each addition until the batter is homogeneous.
- Step 3: Gently fold in the semolina (or flour), the lemon zest, and 1/2 teaspoon of the ground cinnamon. Mix until the ingredients are just combined; avoid overmixing to keep the pie tender.
- Step 4: Pour the prepared batter into the baking pan and smooth the top with a spatula. Bake for 45 to 55 minutes, or until the center is set and the top surface is a rich, golden brown color.
- Step 5: Remove the pie from the oven and allow it to cool in the pan for at least 30 minutes. Once cooled, generously drizzle the entire surface with the Greek honey and sprinkle with the remaining 1/2 teaspoon of ground cinnamon before slicing and serving.

- Store leftover pie tightly covered in the refrigerator for up to 4 days; for best flavor, allow slices to sit at room temperature for 20 minutes before serving.
- Although traditionally served cool, you can warm slices gently in a 300°F (150°C) oven for 5 to 7 minutes if you crave a subtle warmth.
- To achieve the silkiest texture, ensure you thoroughly drain any excess liquid from the ricotta cheese before mixing the batter.
- Enhance the rich, honeyed flavor by serving each slice with a dollop of thick Greek yogurt or alongside a strong espresso.
