Instructions

  1. Step 1: Preheat the oven to 400°F (200°C). In a large oven-safe skillet or roasting pan, toss the potatoes with the olive oil, 1/2 teaspoon of Italian seasoning, salt, and pepper. Roast the potatoes for 15 minutes to allow them to soften slightly.
  2. Step 2: While the potatoes are roasting, season the beef cubes generously with salt and pepper. Remove the pan from the oven and push the potatoes to one side. Increase the heat to medium-high (or heat a separate small skillet on the stove). Sear the beef cubes quickly for 2-3 minutes until browned on the outside.
  3. Step 3: Return the pan to the oven and continue roasting the beef and potatoes together for an additional 8-10 minutes, or until the beef is cooked to your desired internal temperature and the potatoes are fork-tender.
  4. Step 4: While the meat finishes cooking, prepare the garlic butter. Melt the unsalted butter in a small saucepan over low heat. Stir in the minced garlic and the remaining 1/2 teaspoon of Italian seasoning. Cook for 1 minute until fragrant, then remove from heat.
  5. Step 5: Carefully remove the skillet from the oven. Pour the prepared garlic butter mixture evenly over the beef and potatoes. Toss gently to coat everything thoroughly. Garnish with fresh chopped parsley and serve immediately.

Notes

  • Store leftovers in an airtight container for up to 3 days, keeping in mind that the potatoes will absorb much of the remaining garlic butter as they cool.
