Ingredients
Scale
- 3 cups frozen strawberries
- 1 cup frozen pineapple chunks
- 1/2 cup chilled full-fat coconut milk (use the thick cream part only)
- 1/4 cup granulated sugar (or maple syrup/agave to taste)
- 1 tablespoon fresh lime juice
- 1/2 teaspoon strawberry extract (optional, for intense flavor)
Instructions
- Step 1: Place all ingredients (frozen strawberries, frozen pineapple, chilled coconut milk, sugar, lime juice, and extract) into a high-powered blender or food processor.
- Step 2: Begin blending on a low setting, pulsing initially to break up the large frozen chunks. Use the tamper accessory (if available) to push the ingredients down towards the blades, ensuring everything is incorporated.
- Step 3: Gradually increase the speed and continue blending, scraping down the sides as needed, until the mixture achieves a perfectly smooth, thick, soft-serve consistency. Avoid over-blending, which will make the mixture too liquidy.
- Step 4: If the mixture is too soft or runny for piping, transfer it to a freezer-safe container and freeze for 15 to 20 minutes to firm up slightly.
- Step 5: Transfer the Dole Whip mixture to a piping bag fitted with a large star tip (optional) and immediately pipe into serving bowls or glasses. Serve and enjoy immediately.
Notes
- If you have leftovers, freeze them immediately in an airtight container, and allow the mixture to temper on the counter for about 15 minutes before serving again for easier scooping.
- When blending, prioritize using the tamper and pulsing over adding extra liquid; too much coconut milk will quickly turn your perfect soft-serve into a runny smoothie.
- For an extra tropical punch, serve the Dole Whip garnished with fresh lime zest or a sprinkle of toasted coconut flakes.
- To ensure peak flavor, make sure you use only the thick, solidified coconut cream from the top of the can, leaving the watery part behind.
