Instructions
- Step 1: Prepare the chicken and stuffing. Butterfly the chicken breasts (cut horizontally almost all the way through) and pound them lightly until they are about 1/4 inch thick. Season both sides with salt and pepper. Lay one slice of turkey ham and one slice of Swiss cheese on top of each flattened chicken breast.
- Step 2: Roll and secure. Tightly roll the chicken breasts up from one short side, enclosing the smoked turkey and cheese filling completely. Secure the seam and the ends using one or two wooden toothpicks to prevent the filling from escaping during cooking.
- Step 3: Bread the rolls. Set up a standard breading station: one shallow dish with the flour, a second with the beaten eggs, and a third with the seasoned Panko breadcrumbs. Dredge each chicken roll first in the flour (shaking off excess), then dip in the egg wash, and finally coat thoroughly in the breadcrumbs, pressing lightly to ensure the crumbs adhere.
- Step 4: Sear and bake. Preheat the oven to 375°F (190°C). Heat the oil or butter in a large oven-safe skillet over medium-high heat. Sear the chicken rolls for 2-3 minutes per side until golden brown on all surfaces.
- Step 5: Finish cooking. Transfer the skillet directly to the preheated oven and bake for 20-25 minutes, or until the internal temperature of the chicken reaches 165°F (74°C). Remove the toothpicks before serving.

- Cooked Cordon Bleu stores well in an airtight container in the refrigerator for up to 3 days, but avoid freezing as the cheese filling often changes texture upon thawing.
- For maximum crispness, reheat leftovers in a 350°F oven or air fryer for 10-15 minutes; microwaving will unfortunately cause the beautiful Panko crust to become soggy.
- Balance the richness of the turkey ham and Swiss with a simple side dish like steamed asparagus drizzled with lemon-butter or a light green salad tossed in a sharp vinaigrette.
- Chill the fully breaded rolls for at least 30 minutes before searing; this essential step helps the Panko crust adhere securely and ensures the chicken maintains its tight roll shape during cooking.
