Ingredients
Scale
- 4 slices sturdy sandwich bread (e.g., sourdough or whole wheat)
- 1 cup cooked, shredded chicken breast
- 1 medium ripe avocado
- 4 slices cheddar or Monterey Jack cheese
- 2 tablespoons mayonnaise (or Greek yogurt)
- 2 tablespoons unsalted butter, softened
- 1/4 teaspoon garlic powder
- Salt and freshly ground black pepper, to taste
Instructions
- Step 1: In a medium bowl, mash the avocado with a fork until mostly smooth. Add the shredded chicken, mayonnaise, garlic powder, salt, and pepper, mixing gently until the filling is evenly combined.
- Step 2: Prepare the bread slices by spreading the softened butter evenly on one side of each slice. Place the bread on a clean surface, butter-side down.
- Step 3: Assemble the sandwiches: On two of the bread slices, layer two slices of cheese first. Evenly distribute the chicken-avocado mixture over the cheese layer, and then top the mixture with the remaining two slices of cheese.
- Step 4: Top the filling with the remaining two slices of bread, ensuring the buttered sides are facing outward. Place the sandwiches immediately into a large skillet or griddle set over medium heat.
- Step 5: Cook the sandwiches for 3 to 4 minutes per side, pressing down lightly with a spatula, until the bread is deeply golden brown and crispy and the cheese is completely melted and gooey. Remove from heat, slice diagonally, and serve immediately.
Notes
- Store any leftover chicken-avocado filling in an airtight container in the refrigerator for up to 2 days; the avocado color may slightly darken due to natural oxidation.
- If reheating a whole melt, use a toaster oven or air fryer set to medium heat for 3-5 minutes to restore the crispy exterior.
- For balance, serve this rich sandwich alongside a bright side like a crisp mixed greens salad dressed with vinaigrette or a cup of warm tomato soup.
- For a perfect melt, maintain true medium heat and gently press the sandwiches down with a spatula during cooking to ensure maximum crispness and even cheese distribution.
