Ingredients
Scale
- 1 pound boneless, skinless chicken breast (diced into 1/2-inch pieces)
- 2 tablespoons unsalted butter
- 4 cloves garlic (minced)
- 4 ounces cream cheese (full fat, softened)
- 1/2 cup shredded mozzarella cheese (low-moisture)
- 1/2 teaspoon Italian seasoning
- Salt and black pepper (to taste)
- 1 head butter lettuce (leaves separated for wrapping)
Instructions
- Step 1: Melt the butter in a large skillet over medium-high heat. Add the diced chicken and cook for 5-7 minutes, stirring occasionally, until the chicken is browned and fully cooked through. Season generously with salt and pepper.
- Step 2: Reduce the heat to medium-low. Stir in the minced garlic and Italian seasoning, cooking for 30 seconds until the garlic is fragrant (do not let the garlic burn).
- Step 3: Add the softened cream cheese to the skillet. Stir constantly until the cream cheese has completely melted and coated the chicken pieces, forming a creamy sauce base.
- Step 4: Sprinkle the shredded mozzarella cheese over the mixture. Continue to stir until the mozzarella is fully melted and the chicken filling is thick, gooey, and cohesive. Remove the skillet from the heat.
- Step 5: To assemble the wraps, place a generous spoonful of the cheesy garlic chicken mixture into the center of each separated butter lettuce leaf. Serve immediately while warm.
Notes
- The prepared cheesy chicken filling keeps wonderfully in an airtight container in the refrigerator for up to 3 days, but remember to store the butter lettuce separately to ensure it stays crisp for assembly.
- If reheating the leftover filling, gently warm it on the stovetop over low heat, stirring constantly, and add a tablespoon of water or cream if the cheese sauce seems too stiff or dry after refrigeration.
- For a complete low-carb meal, serve these wraps alongside a crisp, chilled side like sliced cucumber spears drizzled with a little lemon and fresh dill.
- To achieve the smoothest, gooiest sauce possible, ensure your cream cheese is fully softened to room temperature before stirring it into the warm skillet with the chicken mixture.
